Royal wedding cake

Vanilla Sponge Cake

Vanilla Sponge Cake I used my herman sourdough starter to create a wonderfully moist vanilla sponge cake.

I used the following recipe for each layer (the orginal instructions are listed below)

Vanilla Cake

1/5 of your herman starter

150g Self raising flour,

3 beaten eggs,

150g caster sugar,

1tsp of vanilla extract

100ml of oil.

Combine all the ingredients and cook in a lined 7″ cake tin for about an hour @ 170C.

Buttercream Icing

75g unsalted butter, softened

2 tbsp milk (semi-skimmed or whole)

1 tsp vanilla extract

225g icing sugar, sifted

strawberries, raspberries, blueberries to decorate

Beat together the butter, sifted icing sugar and vanilla extract, use the milk to loosen the icing if necessary

Spread over the cake and then decorate with the fruit
